Dairy Free French Vanilla Coconut Creamer

Honestly, I don't know why I haven't made something like this sooner. Really baffling. It likely has something to do with the fact that I don't drink much, if any coffee anymore, just my matcha latte that I happen to dream about when I sleep. Not kidding.

What inspired me to get in the kitchen and create a yummy creamer that wasn't full of preservatives and other fillers was for our recent camping trip. Although I had initially told my husband I was going to bring my Vitamix, he said to me "on a quiet morning when all is peaceful, you're going to plug in that sucker and make your latte?" Hmmmm. He had a point. So the morning before we left I threw together my first attempt at a coffee creamer as we were literally packing and running out the door. Turns out it needed a little extra something.

So here's what I came back with. And it's good. Like really good. Almost pour on top of pancakes good. And lick the plate clean good (ok, maybe I just went too far, but you have to try it to understand).

There are two versions of this creamer. One for cold drinks, that has raw honey and one for hot drinks, which has dates. If you follow me, you know I don't do sugar and by sugar I mean, if it's sweet and is classified as a sweetener, than it has to offer some health benefit to the body, otherwise, it's a no go. And with some sweeteners, if you heat them, specifically raw honey, it kills anything beneficial to the body and turns it into straight up fructose. Fructose has a bad rap for a lot of reasons: it promotes dis-ease and illness in the body and is very addictive. Fructose as a sweetener, like high fructose corn syrup, is added to A LOT of processed foods and is one of the reasons we keep going back for seconds, and thirds... and twentieths. 

So honey that is pasteurized is fructose because it's been heated. Raw honey is not heated and has an abundance of health benefits like being a powerful antioxidant, rich in nutrients and enzymes, has healing properties, can help to combat seasonal allergies and was considered a longevity food by ancient civilizations. So, yeah, don't heat your precious honey.

Looking back on my recipes you might have noticed that I don't use honey in anything warm, and that was no accident, very on purpose.

Use this delicious creamer in your coffee, in coffee substitutes like Dandelion Blend, Harmonic Arts Kick Start, Matcha powder or anything else you can dream up.


  • I cup full fat canned coconut milk
  • 2 tbsp raw honey (for cold beverages) or 4 pitted medjool dates (for hot beverages)
  • 3 tsp vanilla extract without alcohol (you will taste it, so choose with out)


  1. For blending with the raw honey, it will only take about 10-15 seconds for it to be well mixed.
  2. For blending with the dates, blend on high for about 1.5-2 minutes to make sure there is not clumps of dates left but is creamy and smooth.
  3. Store in an air tight container for up to a week.
