My daughter started grade one, which means I have to start packing lunches... WHAT?! I have been directing clients and running workshops on how to do this effectively for a few years now, and now, well, time to put my money where my mouth is!
Last year when Story was in kindergarten, a child made a comment about some homemade hummus I had sent for her snack. Story LOVES hummus, but after the comment was made, she told me she wasn't bringing anything like that to school again. From that time on, snacks needed to look 'normal' (whatever that means).
So this year I am creating nutrient dense meals that don't yell "HEALTHY" but look delicious and enticing to anyone, even the pickiest of eaters.
Here's my dilemma: I want my children to have diverse palates where they eat lots of healthy food. I also don't want them to feel self-conscious when they open their lunch. So while they're young and while I still have a HUGE impact as their role model, I will give them "weird" food at home and send "normal" looking food with them to school... normal and seriously healthy food.
The secret ingredient in these muffins is the medicinal mushroom powder. If you do not currently have this in your pantry, I highly recommend that you do. I add this powder to everything, well, almost everything because they are so beneficial to the body. Different mushrooms, contain different properties and the more mushrooms together, the more powerful they are. In my mix, I am adding powerful antioxidants, immune boosting, calming of the mind, anti-cancer fighting power, energy, and support to the nervous system. This makes an ordinary muffin super-powered! Bonus, they don't taste like anything either.
Another bonus, no one will ever know they are there!
We all want our kids to be original thinkers, doers, leaders who make a beautiful difference in the world. But at this age, they just want to fit in. I have to (fight) to accept this. Otherwise, I will do the opposite of what I hope for and alienate her. This would be a bad parenting move.
Also, I just want her to eat her lunch! Seriously.
These muffins absolutely hit all of the above in regards to health, while still looking like an absolutely delicious muffin anyone would want to eat.
- 2 large farm fresh eggs
- 5 tbsp nut/seed butter (seed butter for school friendly lunches)
- 1/4 cup + 2 tbsp pure maple syrup
- 2 tsp vanilla extract
- 2 medium bananas
- 1.5 cups gluten free rolled oats
- 2 tbsp chia seeds
- 2 tsp baking powder
- 1 tsp medicinal mushroom powder
- 1/2 tsp baking soda (omit if using sunflower seed butter. See notes below)
- 1/2 tsp true cinnamon
- 1/4 tsp sea salt
- 1.5 cups shredded zucchini
- Preheat oven to 350 and line muffin tray with liners or use reusable silicon cups.
- Using a high powdered blender like a Vitamix, add all ingredients except shredded zucchini. Blend on high until it's a smooth consistency.
- Transfer to a bowl and add in zucchini. Mix well making sure zucchini is evenly distributed.
- Fill up muffin cups 3/4 full. Makes approximately 14 muffins. Place in oven and bake for 25 minutes.
- Let cool for 10-15 minutes before removing for silicon cups, if using.
Notes: Sunflower seeds and baking soda create a chemical reaction which turns the batter green. This is not harmful in any way, but if you're not looking for a green muffin, it's a good idea to not mix together. If you want to keep the baking soda, use pumpkin seed butter instead or omit baking soda.
