Dairy Free Alfredo Sauce

Sometimes there are recipes that you find that change your life... for the better. This is one of them. It's our version of mac 'n' cheese. The sauce takes 5 minutes to throw together, add to pasta and voila! Dinner.

Because this is a go-to week night dinner when I'm strapped for time (which is often) I've also served this pasta dish to many guests. And guess what? Everyone LOVES it. Seriously, they always ask for seconds and always say how great it was. And most of the guests are not dairy free or gluten free.

Nutritional Yeast is used in this recipe and if you've never had it before, it's a great addition to your pantry. This yeast isn't active, meaning it's no longer alive. It has a cheese-like flavour so it's great to add to recipes to give it a cheesy taste. It's also a complete protein, rich in fiber, minerals and B vitamins. Some other ways I use it is by adding it to my seed bread and on top of pasta dishes. Adding it on top of popcorn is also really yummy.

So here is the life changing alfredo sauce: a recipe adapted from The Fitchen

Ingredients:

  • 1 can full fat coconut milk
  • 1/2 cup nutritional yeast
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 large garlic clove

Directions:

  1. Place all ingredients in a high speed blender and blend on high for 1 minute.
  2. Over low heat in a medium saucepan, pour sauce over 1 bag of cooked gluten free pasta. Cook together on low for about 5 minutes or until sauce has thickened.

Some great additions to this pasta are sauteed mushrooms, any kind of green leaf (kale, spinach, chard), roasted cauliflower and sausage. mmmm... mouth watering and stomach growling.
