Sunbutter Cookies with Coconut Flour

I have been doing quite a bit of experimenting with baking that doesn't include flours that come from grains. The challenge for me is that I don't do well with nuts, which eliminate the option of almond flour or other nut flours and I also don't currently eat eggs. So as you can imagine, my options are slim. The other variable is that I wanted to make a wholesome and nutritious snack for my almost 1 year old child. I decided not to introduce grains of any kind to him until he's well past one. I wanted to have something on hand that was grain free, nut free, egg free (gluten and dairy free of course), healthy and nutritious. Wow, that's a mouth full.

Lake, my almost 1 year old, has only consumed foods that are nutrient rich. These include veggies (LOTS of greens, like with every meal), fruit, some meat, seeds in the form of puddings, butters and mylks and healthy fats from bone broths and coconut oil. Everything that he has eaten over this past year has literally created a foundation for the future. I wanted to give him food that was going to FEED his brain and his body. Boxed cereals are nutrient bankrupt. Not only that but grains in general are very hard on our digestive systems. They are hard to break down, making it hard to absorb their nutrients. They also wreck havoc on our blood sugar levels making them spike and then crash. Babies digestive systems are sensitive and need foods that are easy to digest but also easy to absorb.

This is how I came to creating these cookies. They are full of health fats and protein. I added some raw honey to these cookies to some sweetness. I chose raw honey as it's an unprocessed ingredient and cooking it in an oven kills anything potentially harmful anyways. However, if you're still concerned you could use a high quality pure maple syrup.

Ingredients:

  • 2 tbsp ground chia seeds
  • 6 tbsp water
  • 1/2 cup coconut oil
  • 1/2 cup sunflower seed butter
  • 4 tbsp raw honey or pure maple syrup
  • 1 tsp vanilla powder
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • juice of 1 lemon
  • 1/2 cup + 1 tbsp coconut flour
  • 1/2 tsp baking soda

Directions

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, combine chia seeds and water and whisk until it becomes gelatious. Add coconut oil and sunflower seed butter and whisk again to combine.
  3. Add honey, vanilla, cinnamon, sea salt and lemon and mix in.
  4. Finally, add baking soda and coconut flour and mix until it creates a wet batter. 
  5. Roll 1 tbsp of batter in your hands and place on baking sheet. You should get about 20 cookies. Press balls down with a fork or spatula.
  6. Cook for 13 minutes. Cookies are done when the bottoms are golden. These cookies are chewy so the tops of them will still be soft coming out of the oven.
